  • Design menus in conjunction with Food and Beverage Manager. These need to meet the target market and are in line with the operating concept for the restaurant
  • Assume responsibility for increasing departmental sales and profit
  • Maximise payroll costs by maximising the productivity and efficient scheduling employees
  • Control food cost and wastage
